HMP Brixton’s prison-run restaurant to serve festive roasts from 1 December

It will pair a classic ground-floor pub with a dining room, a 10-seat chef's table and an attic cocktail bar.
The Poet, a new pub from the people behind Sune in Hackney, is set to open in November 2026 inside the London Museum development at Smithfield. It will combine a traditional pub at street level with a dining room upstairs.
Spencer Large, Honey Spencer and Charlie Sims are behind the project. Chef Charlie Tayler will run the kitchen. He most recently worked at Aulis, and before that was head chef of Alyn Williams at The Westbury.
The ground floor will be run as a proper pub. Its bar snacks include a Scotch egg made with Scampi Fries. The first-floor dining room will offer fresh takes on pub classics, and a Sunday roast is planned, although that menu has not been published yet.
Envoi, a chef’s table for 10 guests, will sit on the mezzanine level and offer a tasting menu of 14 courses. Right at the top of the building, the attic will become a cocktail bar with an Arts and Crafts look.
Honey Spencer said the pub would honour “everything we love about a great traditional boozer”, while also putting serious food and cocktails under one roof.
The pub will occupy a corner site in House 5 of the London Museum’s General Market, on Farringdon Street, EC4A 4AZ. The Victorian buildings around Smithfield Market are now protected as part of the museum development. Updates will appear on the pub’s website and on its Instagram account, @thepoetsmithfield.
